The restaurant embraces a philosophy of seasonality and locality, working directly with small-scale farmers and producers across Mexico to create dishes that are fresh, elegant and deeply connected to the land. Located in a small, unassuming space, Expendio de Maíz is unlike any other dining experience in Mexico City. There are no printed menus and no formal courses. Instead, each dish is crafted spontaneously by the kitchen team based on the ingredients harvested that morning. Rooted in indigenous culinary traditions and seasonal Mexican produce, the experience feels more like being invited to someone's home than sitting in a conventional restaurant.

From heirloom corn to wild greens and native beans, everything served highlights the deep biodiversity of Mexican foodways. Tortillas are pressed and cooked before your eyes on the comal. Dishes arrive in a continuous, unstructured flow, each one a surprise. Expect volcanic clay cazuelas, handmade pottery, and recipes inspired by rural communities across the country. The project is led by chef Jesús Tornés, whose vision honors ancestral techniques and embraces spontaneity in the kitchen. Founded by chef Salvador -Chava- Orozco in 2021 -who began serving seafood from his home during the pandemic- the space captures the spirit of a seafood cart from his home state: energetic, authentic, and generous. Vibrant metal tables, Banda music, cold beer, and an open kitchen set the tone for a feast that feels like a seaside escape.

Chava´s menu is a tribute to freshness and tradition. Standout dishes include the towering Señora Torres seafood platter -stacked high with scallops, tuna, octopus, shrimp, onion, cucumber, and avocado drenched in tangy sauce -and the purely indulgent ceviche tripón, packed with scallops, octopus, raw and cooked shrimp, and clams in a spicy, cilantro-lime marinade. It's seafood as celebration, rooted in community and coastal authenticity.

Maza has to be the most underrated restaurant in Mexico City. It's never had the hype of the new trendy restaurants. but it is without doubt one of the best international food experiences you can have in the city. Located in a stretch of Colonia Juárez, Maza Bistrot is a joyful exploration of Indian flavors with a subtle French accent. Chef Rohan Chanana, originally from Rajasthan, brings his deep culinary heritage to life alongside Caroline Astier Chanana from the Drôme in southeast France. The ambiance is warm and unpretentious with amber lighting, high ceilings, wooden tables, and a small bar.

Their menu balances authentic Indian street-food staples such as bhel puri, frankie rolls, rich curries, biryanis, pakoras and chaat with gentle nods to French cuisine like pâté, all sourced seasonally. The concept feels respectful and inventive, not contrived. Each thali or curry du jour is crafted with care, delivering layered and vibrant flavors from the first bite to the last.

Our only drawback, its a bit too pricey.

Located in Roma Norte, Filigrana is a gastronomic journey worth having. The restaurant is set inside the Cauduro building, where a striking mural titled El Condominio stands as a backdrop. In Filigrana, every plating feels like a crafted piece of art: colors are bold, textures are vivid, and each dish unfolds like a narrative thread from Mexico's culinary heritage.

Filigrana's menu is divided into moments-breakfast, lunch, dinner and a Sunday proposal-with an evolving collection of dishes that pay homage to tradition while welcoming innovation. Beyond the food, the space celebrates artisanal craftsmanship through exclusive tableware, traditional Mexican bakery items and edible art like polished conchas, reguiletes de tuna, puerquitos de piloncillo and donas decoradas. The space has a nostalgic, retro taquería vibe, with aluminum details, hand-painted signs, and a lively, casual atmosphere that feels both nostalgic and vibrant. It's a favorite for late-night crowds and sets a familiar, comforting tone.

The menu features a trio of classic proteins: trompo (marinated pork al pastor), res (beef), and chicharrón (pork belly), offered as tacos, gringas, campechanas, piratas or norteñas, letting diners mix and match flavors. Interpreting Mexican ingredients with creativity and deep respect for season, origin, and minimal waste. The space is warm and modern, with wood, natural light, an open kitchen, and a vision that values every part of the ingredient.

The menu changes with the seasons and the availability from regenerative agriculture projects and chinampas. Expect vegetables charred over fire, broths made from what might otherwise be discarded parts, slow?cooked pork, fermented components, and mole de pataxte among other regional elements. His work in researching and reviving traditional dishes has influenced many chefs, including Enrique Olvera, who cites Zurita's scholarly and culinary legacy as foundational in his own understanding of Mexican cuisine. At Azul Histórico you'll find Mexican classics that tell stories - Mole Negro, Cochinita Pibil, Manchamanteles, Panuchos, and Buñuelos Rellenos de Pato - each dish carefully prepared to elevate regional flavors using traditional techniques and impeccable seasoning. El Cardenal has made this list specifically for its breakfast, which is one of the best in the city and certainly the best truly Mexican breakfast. Its lunch and dinner menus are still a work in progress.

The menu is rooted in practices like making tortillas by hand, using nixtamalized corn, producing their own breads and fresh cream, and offering breakfast staples like mole, tamales, chilaquiles, and hot chocolate served with freshly baked bread.
